Cardamom is most commonly sold as a whole pod at spice markets around the world. However, some seeds are “rejected’, those in particular that are not suitable for this route of sale based on visual quality or other irregular features. These pods remain just as interesting for their olfactive qualities as the rest, so we purchase them, avoiding waste, and begin their new complex and beautiful olfactive journey.
Supercritical CO2 Extraction is a technology in which carbon dioxide, put beyond its critical point (73 bars and 30°C), becomes a supercritical fluid with special properties.
The extraction carried out at a low temperature preserves the natural profile identity of the raw material.
dsm-firmenich Natural Ingredients Innovation Center in Grasse, France, carries out a Supercritical Fluid Extraction on whole green pods, yielding an extract blending the strength of the seeds to the freshness of the outer shell.

Both convenient for perfumery and flavor applications. Global production of seeds is 60 to 70K MT : 1st Guatemala (50%), 2nd India (30%).
From Guatemala the majority of the Cardamom export of seeds is for the Middle East - Saudi Arabia is the world’s largest import market for cardamom. In India, the majority of cultivated volumes are for local market and is featured heavily in curries, pickles, custards and spice blends such as garam masala in India, and is also chewed as a nut.
